Betty Lou's TGIF Recipe: Chicken Potpie

For some reason its raining and I'm cold. So I'm busting out a cold weather recipe and my absolute favorite. The Chicken Potpie!



Tuesday I needed to roast some chicken leg quarters and thats when the potpie magic happened, totally on a whim. I was thinking about potpies the week before but didn't check to see if I had the stuff to make it. Turns out I did, so I hunted around for a potpie recipe and made a few changes based on what was in the kitchen. The rest is delicious :) 


Chicken Potpie

Ingredients:


15 oz pre-made piecrust, I like a bottom crust so I used both crusts
10.75 oz can of cream of mushroom
1 1/3 cups milk
3 oz package cream cheese, cut up
1 1/2 cups cook chicken, chopped
10 oz frozen mixed vegetables
1/2 tsp poultry seasoning
1/2 tsp garlic powder
2 tbsp dried onion
salt and pepper to taste


Now What:


Preheat oven to 400ºF. Prepare pastry, set aside. For filling, in a 3 quart saucepan stir together soup, milk, cream cheese and spices. Cook and stir over medium-high heat until cream cheese melts. Sir in chicken and vegetables. For a bottom crust, make sure to grease the pie plate or casserole before placing the pastry. Pour chicken mixture into a 10 inch deep-dish pie plate or similar casserole.


Place pastry over the chicken mixture in dish. Turn edges of pastry under, use fingers or fork to press the top edge of dish. Cut slits in the crust o allow steam to escape.


Bake, uncovered, in the preheated oven for 20 to 25 minutes or until pastry is golden brown. Let stand for 10 minutes before serving.

YUMMY

First off, the cream cheese is really good in this dish but it does make the filling richer then a normal potpie. Second, I played with the spices. The originally recipe just called for sage and pepper. I'm not a fan of sage by its self but I like it in poultry seasoning. As for the garlic and dried onions I didn't feel like messing with fresh, next time I'll try it. Lastly, I really should have let potpie stand for 10 minutes. When I was serving it the filling was runny but when it came time for seconds the filling had thickened up nicely.
