Betty Lou's TGIF Recipe: Stew



We eat a lot of chicken in this house. I really wanted to enjoy some beef. Make something hearty, quick and beefy. Stew!

Thats right I'm going to make stew :)



I looked a few stew recipes and some had cook times between 1 hour to 8 hours! Yikes! Well that just crazy. Most of the quicker recipes use beef stock for a better flavor. After a look in the cupboard found something even yummier, french onion soup. This is the recipe I made up around the soup.

Ingredients:

1 lb. beef - any cut will do 
1 18oz can of french onion soup
6 tbs. flour
2 tbs. high temp. oil
2 medium carrots, chopped into rounds
2 medium potatoes, chunked
4 stocks of celery, chopped
2-3 cloves of garlic

salt and pepper

Now What:

Cube meat into inch pieces. Place meat and flour in plastic bag, shake well. In a Dutch oven or stock pot, brown meat in oil over medium heat. Add liquid; bring to a boil. Add the potatoes, carrots, celery and garlic. Cover and simmer for 45 minutes or until vegetables are tender. If its not thick enough for your tastes, add a few tablespoons of cornstarch.
