Betty Lou's TGIF Recipe: Fried Zucchini

WOW readers! I was lucky to receive a deep fryer for Christmas and it's amazing! The first thing I really wanted to make was some fried zucchini.
Little golden rounds of yummy!







This recipe is super easy. You will wash your hands a LOT but its so worth it!

Ingredients:

2 zucchini, cut into 1/8 inch rounds
1 1/2 cups flour
2-3 eggs, scrambled
2 cups Italian bread crumbs
salt and pepper to season the flour

Now What:

Set up an assembly line of zucchini, flour, egg and bread crumbs.

Let's get messy!
  
 Now dredge the zucchini in flour, tap off excess. Run that through the egg and let exces drip off. Now into bread crumbs. I like to lay the zucchini down on the crumbs then cover with some and give it a gentle press. Shake off the excess crumbs. 

Repeat over and over till finished lol.

Now it's time to fry! With a counter top fryer or a heavy pot on the stove, heat oil to 340ºF. I used canola oil. Batch sizes of zucchini will depending on the size of your fryer. I did 10 to 12 rounds with out over crowding the oil. Have a wire basket spoon handy to flip the rounds. Zucchini with take 3-5 minutes to get golden brown. Make sure to let the oil come back up to temperature before starting the next batch.

Drain the rounds on paper towels and season with salt.
It's totally worth the labor for a goldeny out come:)
