Betty Lou's TGIF Recipe: Pesto

Want something light, fresh and super easy? One word. Pesto!


Only five ingredients to pesto.




Ingredients:

2 bunches of basil
1 handful of nuts, I used almonds cause I don't like pine nuts.
4oz of parmesan cheese
4 cloves of garlic
olive oil


Now What:

First toast the nuts until you can start to smell them, then let them cool. Grab the food processer and pulse the nuts to a rough chop, then add basil and garlic pulse a few times, then add cheese. Now for the fun part. With the food processer going slow pour in the olive oil until the mixture is smooth. If you never done this before, I would recommend stoping the food processer after every 2tbp of oil to check the consistency of the pesto.


Now put it on anything! Pasta, chicken, bread, rice, mashed potatoes. You will want to try it on everything.

I decided to toss this batch of pesto with some bow tie pasta and shrimp.

Don't forget to put some of the pasta water in to help the pesto stick to the pasta.

Just butter and lots of garlic to sauté the shrimp.
