Betty Lou's TGIF Recipe: Hot & Spicy Pork Ribs

I was sitting around kinda hungry, thinking about grilled cheese sandwiches. Then standing in the kitchen trying to decide between that yummy sammie or a bowl of leafy greens, it hits me! I make aprons, people use them to cook but what are they cooking? Or better yet, what isn't cooking? So I decided to pick a delicious recipe to post every Friday. Which is just the ticket for a slowed down, home cooked meal.



Hot & Spicy Pork Ribs
Since the weather is getting more and more beautiful each day, why not fire up the grill and enjoy the sunshine.

Ingredients:

1 onion, chopped
2 garlic cloves, chopped
1 inch piece fresh ginger root, sliced 
1 fresh red chili, seeded and chopped
5 tbsp. dark soy sauce
3 tbsp. lime juice
1 tbsp. jaggery or brown sugar
2 tbsp. peanut oil
salt and pepper
2 lb. 4 oz. pork spareribs, separated 


Now What:

Preheat the grill. Put onion, garlic, ginger root, chili and soy sauce into a food processor and process to a paste. Transfer to a measuring cup and stir in the lime juice, sugar and oil. Season with salt and pepper to taste.

Place the spareribs in a preheated wok or large, heavy-bottom pan and pour in the soy sauce mixture. Place on the stove and bring to a boil, then let simmer over low heat, stirring frequently, for 30 minutes. If the mixture appears to be drying out, add a little water. Remove the spareribs, reserving the sauce.

Cook the ribs over medium heat, turning and basting frequently with the sauce, for 20-30 minutes. Transfer to a large serving plate and enjoy.
