Betty Lou's TGIF Recipe: Citrus Lemongrass Chicken Wraps

So after all the fun and excitement of Easter with family and friends. Trying to give away or eat all the left overs, lamb I hope. :) I'm sure some of you are wondering, where's the booze? In order to kick back and relax, a two-for of recipes is here to rescue you. 






After all that cooking, I really just wanted something simple. Like a fresh wrap, plus a fruity drink!


Citrus Lemongrass Chicken Wraps



Ingredients:

2 chicken breasts, boneless and skinless
1/4 cup teriyaki sauce
1 tbsp. lime juice
1 tbsp. orange juice
1 tbsp. honey
6-8 butter, red or green leaf lettuce leaves
2 tbsp. green onion, sliced
2 tbsp. fresh cilantro leaves

Now What:

Grill chicken over medium heat for about 5-7 minutes on each side or until cooked through. Remove from grill and let cool for about 10 minutes, chop and set aside.

Stir together teriyaki sauce, juices, honey and lemongrass in a medium bowl, stir in chopped chicken. Cover and chill for 20 minutes.

Spoon chicken mixture into lettuce leaves, sprinkle with green onions and cilantro.


Berri Breeze


Ingredients:

1 oz. Absolut Berri Acai
2 oz. grapefruit juice
2 oz. pomegranate juice




Now What:
Fill a tall glass with ice. Pout all the ingredients into the glass, stir and garnish with a slice of grapefruit.
